Resembles a miniature lily pad. Initially sweet tasting, the flavor slowly turns mildly spicy. Picked at a very young tender stage, work well in a variety of savory preparations. Use in green, grain and pasta salads. Add to sandwiches and quesadillas or puree to make a nasturtium pesto

This variety is known by its richly colored red stems and purple tinted leaves. The beautiful oak like leaf offers a mild nutty flavor that is slightly sweet and earthy. Red Russian kale is an excellent source of vitamin C, iron, vitamin A, calcium, magnesium, potassium, and dietary fiber. The meaty green compliments rich flavors such as pork, pancetta, sausage, garlic, chiles, onions, thyme and caraway. Sautee or braise the mature leaves, or use the new sprouts raw in salads.

Red sorrel is best grown for its leaves are best used in fresh . More mature leaves can be cooked like spinach or used in stir-fries.Its bright, tangy flavor pairs well with fish, veal, eggs and potatoes, in soup or gratin. Red sorrel can serve as a thickener for soups and stews. Mix Red sorrel leaves with mixed greens for a citrusy addition to salads. Red sorrel leaves can also be juiced and helps benefit the kidneys and urinary tract. Tea made from steeping the leaves can be helpful for inflammation, fevers and scurvy. Red sorrel contains high amounts of vitamin C and B vitamins.

(Murraya koenigii)
These fresh leaves are used somewhat like bay leaves in Indian cooking, although the leaves are edible after they are cooked and don't need to be removed from dishes before eating. Curry leaves add a bright flavor to rice dishes, lentils, curries, yogurt, and bread, The leaves are usually stripped from the stem, fried in hot oil with other spices, and either used as a base for making a dish or poured over an already prepared dish.
